Recipe: Raw Carrot Cake Bites

I love carrot cake. It’s my most favourite cake ever. The moistness of the cake, the creaminess of the cream cheese frosting…*insert Homer Simpson drool and noise here*
But alas it isn’t so good for my butt. 😉 So I wanted an alternative to my favourite cake without the naughtiness.

This recipe was originally clean eating carrot cake balls, but I changed it up a little to make it ‘slice’ like and cut it into bite size pieces. Honestly, the finished product doesn’t look very appealing, but oh my god it is super tasty!

Raw Carrot Cake Bites

  • Servings: Makes about 20 bites

Ingredients


1 cup almonds
1/2 cup sultanas
1 cup dates, pitted
1 cup desiccated coconut
1 cup grated carrot
1 tsp cinnamon
1tsp nutmeg
1 heaped tbsp coconut oil

Directions

  1. Place almonds, sultanas and spices into a food processor and pulse a few times to create a crumb like texture
  2. Add pitted dates and pulse until mixture holds together slightly
  3. Add grated carrot, pulse until combined
  4. Add coconut and coconut oil, pulse until well combined and forms a sticky ball
  5. Press into a slice tray and place in fridge until set (about 30-60 mins)
  6. Once set, cut up into bite size pieces

You can halve the spice amounts if you’re not keen on strong spice tastes These are great for on the run or with coffee

This mixture can also be rolled into balls if you prefer, should make approx 12 Keep in a air tight contain in the fridge for up to a week
