Recipe: Lemon & Coconut Muffins

Citrus flavours in muffins are my favourite, apart from chocolate of course ūüėČ
This one is not too sweet and not too sour.  Easily made with or without a Thermie.

Really yummy with a dollop of homemade lemon curd.

I have converted the muffin thermomix recipe for your convenience.

Thermomix recipe:

Lemon & Coconut Muffins (Thermomix)

  • Servings: Approx 10-12
  • Difficulty: Easy
  • Print

Ingredients


160gm plain flour
2 tsp baking powder
1 egg
80gm coconut sugar
70gm coconut milk
70gm lemon juice
30gm coconut oil, or butter melted
20gm desiccated coconut

Directions

  1. Preheat oven to 180 degrees and prepare silicone tray or muffin tray with patty pans
  2. Add all ingredients to your thermomix bowl, and blend for 20 second on speed 4
  3. Scrape the bowl and blend again for 10 seconds on speed 4
  4. Spoon muffin mix into prepared tray and bake for 10-15 mins


I found coconut sugar in the baking aisle at Coles, but you can substitute it for raw sugar.

Non Thermomix recipe:

Lemon & Coconut Muffins (Non Thermomix)

  • Servings: Approx 10-12

2/3 cup plain flour
2 tsp baking powder
1 egg
1/3 cup coconut sugar
1/3 cup coconut milk
1/3 cup lemon juice
1/3 cup coconut oil, or butter melted
1/3 cup desiccated coconut

Directions

  1. Preheat oven to 180 degrees and prepare silicone tray or muffin tray with patty pans
  2. Add all ingredients to a bowl, and combine well
  3. Spoon muffin mix into prepared tray and bake for 10-15 mins
