Recipe : Butterscotch Buttons

Since having my thermomix I have not bought packet biscuits. Actually I haven’t bought packet anything, everything has been made from scratch, back to basics if you will. I suffer from Fibromyalgia so anything processed can potentially make me have a flare up. I am so grateful that we can afford this wonderful machine, and on the plus side it has amped up my love of cooking and baking. And whatever meal or snack I’ve made they sure don’t last long with my family.

These butterscotch buttons are so good, you can’t  just have one! Perfect to have with a coffee in the afternoon or pop one in the kids lunchbox for a treat.  Easy to make. You know what’s going into your child’s body and there’s nothing better than homemade!

The original recipe states it makes 60 portions, but I have found to only be able to make approx 24 medium sized biscuits.

Thermomix version:

Butterscotch Buttons (Thermomix)

  • Servings: Approx 24
  • Difficulty: Easy

Ingredients


250gm butter, softened
185gm brown sugar
15gm vanilla extract
50gm golden syrup
440gm self raising flour

Directions

  1. Preheat oven to 150 degrees (fan forced)and prepare biscuit trays with baking paper
  2. Place butter, sugar, vanilla, and golden syrup into your thermomix bowl
  3. Blend for 1 min on speed 5
  4. Scrape down the sides and blend again at the same speed as before
  5. Add 220gm self raising flour and blend for 20 seconds on speed 6
  6. Scrape down the sides and add the remaining flour
  7. Blend 1 min on dough mode, with the MC off
  8. Measure out in approx 2 teaspoons worth and roll into balls
  9. Place on lined tray and flatten slightly with a fork, placing them 3-4cm apart to allow for spreading.
  10. Bake for 17-20 mins or until golden brown
  11. Allow to cool completely before storing in an air tight container

Non Thermomix version:

Butterscotch Buttons (Non Thermomix)

  • Servings: Approx 24
  • Difficulty: Easy

Ingredients

1 cup brown sugar
1 tbsp vanilla extract
1/3 cup golden syrup
3 cups self raising flour

Directions

  1. Preheat oven to 150 degrees (fan forced) and prepare biscuit trays with baking paper
  2. Place butter, sugar, vanilla, and golden syrup into a bowl: Using a hand blender or mixer, mix for 1 min then scrape down the sides and mix again for approx 30 seconds
  3. Add half the self raising flour and mix again for approx 1 min
  4. Scrape down the sides and add the remaining flour and mix for approx 1 min; a soft dough should form
  5. Measure out in approx 2 teaspoons worth and roll into balls
  6. Place on lined tray and flatten slightly with a fork, placing them 3-4cm apart to allow for spreading.
  7. Bake for 17-20 mins or until golden brown
  8. Allow to cool completely before storing in an air tight container
