Recipe: Apple Tea Cake

Now winter is well and truly here in Perth, there is nothing better on a cool winters afternoon than a hot cup of tea or coffee with a piece of cake. Plus my kids love it, who doesn’t love cake after a long day at school or work?
This can easily be done with or without the Thermomix. It’s basically a chuck it all in and mix kinda cake! Super easy and super tasty.

Apple Tea Cake

What you’ll need…


Cake:
120gm softened butter, cut into cubes
3 apples, cut into quarters with the core removed
3 eggs
120gm caster sugar
200gm self raising flour
1 teaspoon vanilla extract

Cinnamon Sugar topping:
20gm butter, melted
1 tablespoon caster sugar
1 teaspoon cinnamon

Method:
Preheat oven to 180C and grease a cake tin (26-28cm).
Peel and core your apples and cut into slices (Not too thin)
Cream the butter and sugar, then add the eggs and beat again.
Add the flour and vanilla and beat until combined. Don’t overwork the cake batter.
Pour the mixture into the baking tin and use a spatula to smooth and spread evenly.
Place the apple pieces on the top
Bake for approximately 30 minutes or until the cake is golden and a skewer comes out clean.
Allow the cake to cool, then brush with the melted butter and sprinkle the cinnamon sugar over the top before serving.
