Recipe: Easy Peasy Apricot Chicken (Thermomix)

Apricot chicken has been a long time favourite meal of mine, but I always hated making it until I found this recipe, I omitted one ingredient as I knew my kids wouldn’t touch it if it was in any way spicy.
This could easily be made without the aid of the Thermomix. (If you like your sauce thicker, just as 1 tablespoon of cornflour) If you want it spicy just add 1 teaspoon of curry  or chilli powder.

Easy Peasy Apricot Chicken (Thermomix)

  • Servings: Approx 4-6
  • Time: Approx 20 mins

Ingredients

1 brown onion 600-700gm diced chicken breast 20ml oil 1 tin apricot halves in juice or nectar 1 french onion soup sachet

Directions

  1. Place onion and oil in bowl, chop for 3 seconds on speed 7
  2. Scrape down the sides and sauté for 3 mins, 120 degrees or Varoma, speed 1
  3. Add all other ingredients with the chicken being last into the bowl (including the juice/nectar from the apricot halves tin)
  4. Cook for 17 mins, 100 degrees, reverse, soft speed
  5. Serve with rice
