Recipe: Lemon & Coconut Muffins

Citrus flavours in muffins are my favourite, apart from chocolate of course 😉
This one is not too sweet and not too sour.  Easily made with or without a Thermie.

Really yummy with a dollop of homemade lemon curd.
Click here for a Thermomix recipe for lemon curd, or click here for a non Thermomix recipe for lemon curd.

I have converted the muffin thermomix recipe for your convenience.
Enjoy.
